Butter Rolls

2 T. Yeast
2 C. Warm Water
2 T. Sugar

1 C. Melted Butter
1 C. Sugar
6 Beaten Eggs
1 1/2 t. Salt
8-10 C. Flour

Mix first 3 ingredients and let raise for +5 minutes. Add melted Butter, Sugar, and Eggs; mix well. Add Flour and Salt; mix well. Let raise 2 hours then punch down and cover. Put in fridge overnight.
Separate dough into 4 equal parts, roll each into large circle. Brush with melted butter and cut like a pie into 12 pieces. Roll up starting with wide end. Place on buttered cookie sheet, making sure tail end is next to pan. Let raise 4-5 hours. Bake at 350 for 10-12 minutes.

These rolls are heavenly! We had them for Thanksgiving and I can't tell you how many I had. They are soft and yummy.

Razzleberry Pie

Pie crust
Egg

1 Bag of Blackberries
1 Bag of Raspberries
1/2 C. Sugar
3 T. Corn Starch
Drain as much of the juices as possible. Mix all these gently in a bowl. Put into pie crust that has been brushed with beaten egg. Put top crust on and cook at 450 for 10 min. lower heat to 350 and bake for 30-35 min. Make sure there is tin foil below incase it spills.

Everyone said they loved this pie. I unfortunately didn't have any because I refuse to gain any more weight! But don't that that stop you, enjoy!!

Peach Pie

1 double pie crust, homemade or store bought

1 Egg, beaten
5 C. sliced, peeled Peaches
2 T. Lemon Juice
1/2 C. Flour
1 C. Sugar
1/2 t. Cinnamon
1/4 t. Nutmeg
1/4 t. Salt

Preheat oven to 450.
Brush bottom crust with egg to keep the dough from becoming soggy later.
Place the sliced peaches in a large bowl and sprinkle with lemon juice. Mix gently. In separate bowl mix together flour, sugar, cinnamon, nutmeg, and salt. Pour over peaches and mix gently. Pour into the pie crust. Cover with the top crust and fold the edges under. Flute the edges to seal. Brush remaining egg over the top crust, Cut several slits in the top crust to vent steam.

Bake for 10 min. then reduce to 350 and bake for another 30-35 min., until the crust is brown and the juice begins to bubble through the vents.

This is so good! It does get runny, although fresh peaches aren't as bad. Pretty easy to make.



Tomato Chicken Parmesan

1 lb. boneless, skinless Chicken Breasts
Milk
Flour
Egg
Bread Crumbs
1 lb. Mozzarella Cheese, sliced
Spaghetti Sauce

Bread chicken in milk, then flour, then egg then bread crumbs. Cook in a pan in hot oil until done (about 4 min. each side). In 9 x 13 pan, add enough sauce to cover bottom, add chicken. add mozzarella slices and bake 350 for 20 min. Top with remaining sauce and serve over rice or noodles.

So the first time I made this I followed the recipe. It was really good, but I didn't like the fried chicken. The second time I made this I cooked the chicken in a pan with a few seasonings and then put it in the sauce and cooked it and served it over noodles. Pretty tasty!! And we definitely will be making this again.

Latis Chicken

1 can Cream of Potato Soup
1 C. Milk
1/2 t. Season Salt
2 C. cooked, cubed Chicken
16 oz. frozen Broccoli, Cauliflower, and Carrots
1 C. Grated Cheese
1 C. French Fried Onions
1 pkg. Crescent Rolls

Mix first 5 ingredients, 1/2 cheese and 1/2 onion rings. Put in oven at 350 covered for 20 minutes. Take out, lay crescent rolls on top. Cook uncovered for 15 minutes. Take out and put the rest of cheese and onion rings and cook 5 more minutes.

This was ok. My family wasn't a huge fan of it. They really didn't like the broccoli and cauliflower. I thought it was ok.

Chicken and Potatoes

4-6 Thinly sliced Potatoes
Chopped green onions
1 can Cream of Mushroom
1 can Cream of Chicken
1 can Mushrooms (opt)
1/2 C. Grated Cheese
3-4 Chicken Breasts

Preheat oven to 350. Grease casserole dish. Line bottom of pan with sliced potatoes, salt and pepper. Sprinkle onions on top of potatoes then place chicken breasts on.
Mix soups, mushrooms and cheese in separate bowl and then put in the casserole dish. Work it down a little. Sprinkle with cheese, bake 1 1/2 hours, uncovered.

I cut the chicken in half. I also used button mushrooms. Everyone loved these. Good as left overs too. My only suggestions would be that if you don't have a mushroom lover, cut them up small so they can't see them.

Salty Bones

Rhodes Rolls
Coarse Salt

Thaw rolls. Take each roll and stretch out. Cut each end 1- 1 1/2 inches then roll each strip up.
Bake 350 for about 10-12 minutes.

In honor of my favorite holiday I found this recipe! Super easy and yummy. Serve with spaghetti sauce. Familyfun.com has a lot of great ideas!

Potato Hash

green peppers
yellow peppers
red peppers
orange peppers

Dice up veggies and saute in a pan with oil. Use any seasonings to taste (salt, papper, veggie seasonings etc...)

Zita

1 lb. Ground Beef
1/4 C. Onion
1 16 oz. Jar Spaghetti Sauce
1 C. Water
2 C. Mozzarella Cheese
1/2 Pkg. of Zita Noodles

Cook beef and onion. Boil noodles. Combine beef, noodles, water, and sauce (except 1 cup). Layer in a 9 x 13: 1/2 of the noodle mixture, 1/2 the cheese, rest of noodles, 1 cup of sauce, rest of cheese. Cook at 350 for 20-30 minutes.

This is pretty easy once you get the hang of it. I halve it because we can never finish the left-overs, I put it in a 8 x 8 dish. Worth making at least once. It's a mix between spaghetti and lasagna.

Wheat Bread

MAKES 3 LOAVES!

2 T. Yeast
1 1/2 C. Warm Water
2/3 C. Honey

2 Eggs
2 C. Milk
1/2 C. Oil
1 T. Salt
5 C. White Flour
3/4 C. Flax Mill
5 C. Wheat Flour

Combine water, yeast and honey in mixer and let rise for 5 minutes. Add everything else except the wheat flour. Mix well. Let rise for 15-30 Minutes. Add wheat flour and mix in mixer for a few minutes making sure the dough pulls everything away from the sides of the bowl. This shouldn't be too sticky. Form into loaves, put in bread pans and let double in size. Bake at 400 for 5 minutes and 350 for 20+ minutes.

This is pretty easy to make, and it's pretty tasty too. Everyone loves warm homemade bread! The second time I made it I halved the recipe, making 1 loaf and then rolls.

Oreo Brownies

3/4 Pkg. Oreos- crushed
1 Brownie Mix
1 Small Jar Marshmallow Creme
1 Container Chocolate Frosting

Put Oreos in a ziplock and crunch. It doesn't need to be fine, coarse bits are great! Put most in a greased 9 x 13. Mix Brownie mix as directed and put on top of oreos. Just dab it on so the oreos don't move around, but try to get it even. Bake as directed on box. When it comes out put Marshmallow Creme on, spread it evenly. Let it set a bit and then frost it with the Chocolate Frosting and put remaining bits of oreos on top. If you need more you can crunch up more, unless you ate them.

This is SOOOO good! I can't believe how yummy these things are! You've gotta try them at least once. If anyone can think of a better name for these I'd love to hear it.

Taco Salad

1 lb. Ground Beef
1 Large Onion
Salt and Pepper
1 can drained Red Kidney Beans
1 can drained Corn opt.
1 small bottle Taco Sauce
1 head of Lettuce
2 C. grated Cheese
1 pkg. broken Taco Chips or Doritos

Brown beef with onion. Salt and Pepper to taste. Drain. Mix in Red Kidney Beans, Corn, and Taco Sauce. Let this cool. Cut up lettuce, toss in grated cheese. When ground beef is cool mix it with lettuce along with broken Taco Chips.

This was surprisingly very good. I didn't think it would be, so I put tomatoes and sour cream on it. It is much better without the extras. I didn't use a whole head of lettuce and I added the corn. If Jeremy was making this he wouldn't add the taco chips in because they got soggy after awhile, but I liked it. He would add it individually to each serving.

I also think that this is a perfect way to use your food storage onions. It's so easy to put a large handful or more in place of the large onion.

Banana Bread

1/4 C. Butter- softened
1 C. Sugar
1 Egg
3 Mashed Bananas
1/2 C. Sour Milk (Add 1 1/2 t. Vinegar)
1 t. Soda
2 C. Flour
Pinch of Salt
1/2 C. Chopped Nuts opt.

Mix butter and sugar until blended. Add egg and bananas and mix well. Add in 1 c. flour, soda, and salt. Add the sour milk, the 1 c. of flour. Mix in nuts if wanted.
Put in greased bread pan and bake  for 1 hour (in a glass pan) at 350- test with a toothpick.
Cool on a rack out of pan.

Like I said I've had this recipe forever. It is so yummy, especially when spread with butter.

Apple Crisp

8 Granny Apples

1 1/2 C. Brown Sugar
2/3 C. Softened Butter
1 C. Flour
1 C. Oats
1 1/2 t. Cinnamon
1 1/4 t. Nutmeg

Peel, core, slice the apples and put in a casserole dish, I used a 8 x 11. 
Mix the rest of the ingredients together in a bowl then spread on the apples. Bake at 375 for around 35 minutes, maybe a little longer depending on the dish.

I have an apple machine that cores, peels, and slices. It is so nice and worth every penny! After I use this machine on my apples I cut them 4 ways to make the rings smaller- into small slices.

This topping is the best! So yummy. Thanks Jamie for sharing.

Snickerdoodles

1 C. soft Shortening
1/2 C. Sugar
2 Eggs
2 3/4 C. Flour
2 t. Cream of Tartar
1 t. Soda
1/2 t. Salt

Blend together the shortening, sugar and eggs. Add dry ingredients to creamed mixture. Roll dough into balls the size of walnuts. Roll in mixture of cinnamon sugar. Place on ungreased cookie pan, Bake at 400 for 8 - 10 minutes.

This recipes says to leave them in ball form and the will flatten out. As you can see in the picture what is a ball stays a ball. I flattened some because that's how I like it. These cookies are harder than others that I've had. I didn't like the first one I had, but they have really grown on me and I think they are super good. I still like the gooey, chewy ones too I just have never made snickerdoodles before so I don't know what recipe it is.

Hawaiian Haystacks

1 pkg. Chicken- cubed
Lemon Pepper
1 Green Pepper- diced
1 Tomato- diced
Green Onion- chopped
Chow Mein Noodles
Pineapple Tid-bits
Olives

Gravy:
1 can Chicken Broth
2 cans Cream of Chicken

Cook rice. Cook chicken and season with anything you want, I used Lemon Pepper. Mix the gravy together and heat. It makes a lot! But I couldn't think of a way to half it without having 1/2 a can sitting around.
Add any of these toppings, and any others that you can think of.
Simple, Fast, Yummy.

Chicken Caesar Wraps

3 T. Olive Oil
1 t. Lemon Pepper
1 t. Crushed Garlic
1/2 t. Italian Seasoning
1 lb. Boneless, Skinless Chicken Breast

Romaine Lettuce
Flour tortillas
Caesar Dressing





Combine in a container (or bag): olive oil, lemon pepper, garlic, italian seasoning. Put chicken in container and refrigerate for 15 min. Grill 10-14 min. on med. heat until done and cut into strips. 
Place romaine lettuce and strips on warm flour tortilla, top with caesar dressing and fold up.

This is a pretty good recipe, and it doesn't take too long! All of my kids loved it so I thought I'd include a picture of them eating it.

Spanish Rice Main Dish

1 lb. Hamburger
1 Large Onion- chopped
1 Large Green Pepper
28 oz can Tomatoes- diced (undrained
1 C. Water
1 C. Rice
1 T. Brown Suger
1 T. Worcestershire Sauce
1 t. Salt
1 t. Chili Pepper
1 can Corn (undrained)
1 can Kidney Beans (drained)


Toppings:
Tortilla Chips
Sliced Olives
Green Onions- Sliced
Grated Cheese
Sour Cream

Brown beef with onions (I used cannery onions) and green pepper. Drain. Stir in the rest of the ingredients. Cover and simmer 30 minutes, until rice is done and liquid is absorbed.
Serve on a bed of tortilla chips and sprinkle with desired toppings.

This is so good! If you've ever had stuffed green peppers this is almost just like it. I don't like to eat all the shell of the pepper, so this recipe is great because it's chopped up small. The toppings also add so much flavor! This makes a lot so you'll have left overs for a few days.

I also wanted to add a bit about those wonderful kitchen scissors that comes with knife sets. I love to use them to cut up chicken, but they are also wonderful to "slice" green onions. Just cut to your hearts content!

Pizza without Red Sauce

Sauce:
2 T. Melted Butter
1 T. Olive Oil
3 T. Minced Garlic
2 T. Sun-Dried Tomato Pesto
1 t. Dried Basil
1 t. Dried Oregano
1 T. Grated Parmesan Cheese

Toppings:
1 Tomato thinly sliced
1 bunch of Spinach, torn in small pieces
1 Sweet Onion, thinly sliced
1 fresh, chopped Jalapeno Pepper (Opt)
6 oz. package of Feta Cheese, crumbled

In a small bowl combine all the sauce ingredients and spread on your crust evenly. Arrange tomatoes evenly over all the sauce. Then add torn spinach. Place onions on and opt. jalapeno. Last top with crumbled feta cheese.

This is so good! I can't believe how good it is. If you ever want to impress anyone this would be the dinner to do it!

I also want to add a picture of the Tomato Pesto. Sometimes I have a hard time finding it in Utah.

Excellent Pizza Dough

1 C. Warm Water
2 1/4 tsp. Yeast
1 tsp. Sugar

2 T. Oil
2 1/2 C. Flour 
1 tsp. Salt

Corn Meal
 
Combine water, yeast, and sugar. Let rise for 5 or so minutes. Put Oil in mixer then add yeast. Add flour and salt. It should be a little sticky but not a gooey ball of yuck. If it is, add more flour. Let rise, covered, for at least 20 minutes.

Put corn meal on your baking sheet, pizza stone or whatever you are using. Just a light coverage will do. Roll out your dough. Roll it off of the side so there will be a crust. If you want you can put sting cheese in it for a stuffed crust. Poke the bottom of the crust with a fork then add your toppings at bake at 400 for 15-25 minutes.

I added a cheese pizza picture here. You just put spaghetti sauce (I like Prego) then shredded mozzarella cheese on. Not to much of either or it will be soggy.

I had a neighbor move in that does Friday night pizza night. She taught me how to make some really yummy pizzas. So you are lucky and will get 2 posts today, one the dough, and the other toppings for a really good feta pizza.

Black-Bottom Banana Bars

1/2 C. Margarine softened
1 C. Sugar
1 Egg
1 tsp. Vanilla Extract
1 1/2 C. Mashed Ripe Bananas
1 1/2 C. Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1/4 C. Baking Cocoa

Cream butter and sugar. Add egg and vanilla; beat until thoroughly combined. Blend in the bananas. Combine flour, soda, powder, salt; then add to creamed mixture and mix well. Divide the batter in half. Add cocoa to half; spread into a greased 13 X 9 baking pan. Spoon remaining batter on top and swirl with a knife. Bake at 350 for around 25 minutes.

This is really yummy and tastes a lot like banana bread, with a chocolaty twist. Gotta love a grandmas recipes.

Cream Cheese Chicken

5-6 Chicken Breast (Boneless, Skinless)
8 oz. Cream Cheese
1 Can Cream of Chicken
1 Envelope Italian Salad Dressing (Good Seasons)
Rice

Wash and cut your chicken breast in half. Put in Crock Pot. Mix warmed Cream Cheese, Cream of Chicken, and Salad Dressing packet. Smear over, under, around... chicken. Cook on high for a few hours, or low for more hours. 

Serve with Rice.

This is so Yummy!! The chicken is so tender and tasty. I put this in around noon on high and we eat around 5:30. I can't believe how simple it is to make. My whole family loves this recipe. Good Luck and Good Eats!

Broccoli Cheese Soup

4 C. Water
1 t. Chicken Bouillon
2 Cans Cream of Chicken
3/4 C. cooked Noodles
1 lb. Broccoli- frozen
1 lb. Velveeta Cheese- cut into squares
1 C. milk

Cook noodles and broccoli. Put in strainer when done and save for later. Put 4 cups water in pan with Bouillon, Cream of Chicken, Velveeta, and Milk. Heat until everything is melted, stir a bit so it doesn't stick to the bottom. Add Noodles and Broccoli and cook altogether. Serve with some yummy bread, if you want.

The recipe is actually a bit different in preparation. But this way is easier and uses less dishes. It's pretty fast and easy to make, and it makes a lot, which means yummy left overs! My kids like this because of the noodles, and that's how I get them to eat a little of the broccoli. In the picture is Ziti Noodles, but I've used all sorts. My favorite (and my family) are Wagon Wheel Noodles.

Chicken Zucchini Bake

1 Small Zucchini
2 C. Cooked Chicken- cubed
1 Can Cream of Chicken Soup
2 T. Milk
1 C. Bisquick
1/2 C. Parmesan Cheese
1 Egg
1 t. Parsley Flakes
1/4 C. melted butter or margarine

Heat oven to 350. Arrange zucchine in an 8 X 8; top with cubed chicken. Mix soup and milk together and spread over chicken. Mix bisquick, cheese, and beaten egg together until crumbly. Spread over soup mixture. Sprinkle with parsley and drizzle with melted butter. Bake until golden brown for 25-30 min.

This is pretty good. Very easy to make. I haven't been a fan of bisquick topped food so I'm not a fair judge. When I make this again I'm going to put 2 layers of Zucchini down (much to the chagrin of the boys in my family) and less top. If you like bisquick tops you wont have a problem liking this!

Corn Bread


The BEST corn bread you will ever have!

I can't remember where I got it. 

1/2 C. Butter
2/3 C. Sugar
2 Eggs
1 C. Buttermilk*
1/2 t. Soda
1/2 t. Salt
1 C. Yellow Corn Meal
1 C. Flour

*Can be made by adding 1 T. of vinegar to 1 C. milk. Do this first and set aside until needed.

Melt butter, then add sugar and mix well. Add eggs and mix well. Combine buttermilk and soda and then add to the other mixture. Mix in salt, flour, and then corn meal. Make sure not to overmix and this will leave it dry and crumbly (I think.)  
Put in greased 8 X 8, cook at 375 for 30 minutes (clean toothpick.) I like to put mine in a 
8 X 11.5 pan, because it makes a bit more and isn't so thick. 
Serve with butter, honey, or honeybutter. (If anyone has a good honeybutter recipe, I'd love it!)

When we moved out to Michigan I thought my corn bread making days were over because it never turned out well. But I found out it was because of the corn meal I was using. I like to use yellow corn meal that's Quaker brand. The other kind was so white, dry and crumbly that it wasn't worth trying to scrape it out of the pan!

PS My camera is getting old and isn't taking pictures how I want, so this is the best photo I could come up with. Also our apartment doesn't have the best lighting so that doesn't help!

FANCY CHICKEN NUGGETS

Lay chicken nuggets in pan
Top with sliced mozzarella

Easy Parmesan Garlic Chicken

1/2 C. Grated Parmesan Cheese
1 env. Italian Salad Dressing Mix
1/2 t. Garlic Powder
6 Boneless, Skinless Chicken Breasts

Mix cheese, salad dressing mix, and garlic powder. Moisten chicken with water. Coat with cheese mixture. Place in shallow baking dish. Bake 20-25 minutes (until chicken is cooked through.) at 400 degrees.

Aren't you guys lucky,  2 posts on one day! This was really tasty. The only thing I would change is, either 1/2 the cheese mixture or increase the chicken pieces. I ended up putting the rest of the mixture on top of the chicken. Oh, and I also cut the chicken breasts in half. My kids can't eat a whole one and it's easy to cut it before it's cooked. Yum-O.

One tip I MUST share! If you don't have/use kitchen cooking scissors I highly recommend getting some/ using them. It saves so much time. I wash my chicken and trim all the yucky, fatty spots off at the same time. Then I can cut it into pieces if I need. This also makes for a cleaner kitchen because all the chicken germs are contained to the sink! I love them!

Easy Au Gratin Potatoes

3 lb. Southern Style Frozen Potatoes
3/4 C. Shredded Cheddar Cheese
3/4 pt. Sour Cream
1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
1 bunch of Green Onions- chopped
1/4 C. Butter
Milk

Put potatoes into a 9 X 13 inch pan. Set aside. Combine other ingredients in a saucepan on medium heat. Stir until smooth. Add milk to thin. Add Salt and Pepper. Pour over potatoes. Stir. Bake at 350 for 45-60 minutes.

This was really good. We couldn't find the frozen potatoes so I sliced fresh ones and boiled them. Next time I make them I wont boil them for as long, but other than that, it was great! Sorry I don't know how much milk is added. I really hate it when there isn't an amount. I made this with Parmesan and Garlic Chicken, a very nice combo.

Egg Braid Bread



4 oz. Cream Cheese
1/2 C. Milk
8 Eggs, (one separated)
1/4 t. Salt and Pepper
1/4 C. Red bell Pepper- chopped opt.
2 T. Green Onions- Sliced opt.
1/4 lb. Deli Ham- thinly cubed opt.
3/4 C. Fresh Mushrooms- chopped opt.
2 8oz. Packages of Crescent Rolls
1/2 C. Shredded Cheese

Warm Cream Cheese and Milk in the microwave. Whisk until smooth, then add yolk of separated egg, 7 whole eggs, salt and pepper, red pepper, green onion, ham, and mushrooms. Pam a frying pan and cook until done.

Pam a cookie sheet, then unroll rolls and smooth cut lines. Put the egg mixture on the long roll. Put shredded cheese on both braids. Close the braids by pulling up the short side, then long sides, then the last short side. Brush with egg white. Cook at 375 for 18-24 Min.


We like to eat this for dinner, but it would really be good in the morning too. It's great for buffet and Christmas morning. You can put whatever you want in it. I add mushrooms and take out ham. Either way is good.

Favorite Baked Potato

The perfect kick your baked potato has been waiting for!

Recipe...
-Wash and scrub potatoes.
-Poke each one with a fork on all sides.
-Roll in room temperature butter.
-Place on individual foil wraps and sprinkle with a lot of season salt.
-Roll potato in foil wrap, securing all sides.

Bake at 350 for 1 hour (or longer depending on size.)

Garnish with your favorite toppings after they're baked!

This smoothie is delicious!  And it's good for you!  It has more that 20 vitamins and minerals, is high in anti-oxidants, promotes healthy digestion, and is good for your heart.
In a blender...
-Fill the blender halfway with apple juice.
Then add...
-1/3 cup vanilla yogurt.
-1 peeled and pitted avocado.
-1 large handful frozen strawberries.
-1 small handful frozen blueberries

Blend well.

(To thicken add more frozen fruit, to thin add more apple juice.)

Serves 4-6

ROAST BEEF

A very tender roast that pulls apart in moist strips.
SMALL ROAST
-Roll roast in flour until lightly covered.
-Place in a baking dish.
-Pour 1 package of Lipton Onion Soup + 2 cups water over the roast, water level needs to be almost to the top of the roast.
-Cover with secure baking lid.

Bake on 350 for 4 hours.


MEDIUM ROAST
-Roll roast in flour until lightly covered.
-Place in a baking dish.
-Pour 2 packages Lipton Onion Soup + 4 cups water over the roast, water level needs to be almost to the top of the roast.
-Cover with secure baking lid.

Bake on 350 for 6 hours.


LARGE ROAST
-Roll roast in flour until lightly covered.
-Place in a baking dish.
-Pour 3 packages Lipton Onion Soup + 6 cups water over the roast, water level needs to be almost to the top of the roast.
-Cover with a secure baking lid.

Bake on 350 for 8 hours.
